  1. Take 2 chicken breasts

  4. Prepare Small dish of plain flour
  5. Take Olive oil to shallow pan fry

Usually boneless chicken pieces are flattened before cooking. But in this recipe we flatten trimmed, bone in, skin on chicken breasts to retain as much flavor in the chicken as possible. We really do want you to smash the chicken to bits, so don't be shy. Peel off the top layer of cling film and pull the chicken off in thin strips or ribbons.

Instructions to make Smashed chicken:
  1. Flatten chicken breasts with a rolling pin or meat tenderiser- they need to be about 1cm thick to cook quickly. If they are large cut in half before flattening.
  2. Set out dishes of flour, milk,breadcrumbs. Start by pressing each piece of flattened chicken firmly into the flour on both sides.
  3. Dip one piece of chicken into milk on both sides and straight into the breadcrumbs and press firmly. Remove to a plate and repeat until all chicken pieces are coated.
  4. Heat some oil (I use olive oil) in a frying pan and when hot cook the chicken in batches, approximately 4 minutes per side. Check one to see the the chicken in cooked through.
  5. Serve immediately with salad of your choice.

We really do want you to smash the chicken to bits, so don't be shy. Peel off the top layer of cling film and pull the chicken off in thin strips or ribbons. Repeat with the remaining thighs and season the chicken with salt and pepper. Combine the garlic powder, onion powder, paprika, parsley, oregano, cayenne pepper, sage, thyme, coriander, celery seed, salt, and black pepper in a bowl. Rub the chicken inside and out with the spice blend.
