Place pizza directly onto oven rack. Grill or griddle-cook the chicken a few minutes on each side then transfer to baking sheets. Top chicken with sauce and then mozzarella cheese, as if it were a small pizza. Broil to brown and melt cheese.
Steps to make Chicken Pizza:
- Heat oil in saucepan over medium heat. Add onion and sauté until soft, about 5 minutes. Add garlic, oregano, salt, cumin and chilli powder. Stir and cook for 1 minute. Add tomatoes, can of tomatoes and stock pot along with 500ml water. Leave to simmer.
- Preheat oven to 180C. Heat 2 tsp oil in an oven proof frying pan over med-high heat. Add the chicken and brown on both sides. Sprinkle each side with the salt, black pepper and basil. Add in the tomato sauce.
- Sprinkle each piece of chicken with the cheese then top with pepperoni slices. Place in oven and cook until chicken is cooked all the way through, about 15-20 mins.
- For the salad, place pepper, cucumber, lettuce and salad leaves together in a bowl and mix. For the dressing, mix the olive oil, vinegar and mustard in a jug and whisk together.
- Take the “pizza” out of the oven and serve with salad.
Top chicken with sauce and then mozzarella cheese, as if it were a small pizza. Broil to brown and melt cheese. Top with chicken mixture and cheese. Sprinkle with pepper and remaining salt. Freeze option: Securely wrap and freeze unbaked pizza.
