- Roll another ball similarly.
- Put it on the top of the first circle sheet.
- Then,grease ghee and spread flour on the top of second sheet.
- Next,roll third circle sheet
- Put on the second one.
- Then grease ghee once again
- Spread flour again.
- Roll the last circle sheet
- Put it on the third one.
- Then,stick all the edges of the sheets into equal shape.
- Then,all the flour sheet roll together tightly to resemble a log.
- Cut the flour log into equal size pieces of 1 inch each.
- Roll each pieces by rolling pin with some flour.
- Now,heat enough oil in deep fry pan.
- Fry all of them one by one on medium flame
- Untill they have turn golden brown on both sides.
- Cool them completely
- Next, take two cup sugar and 1 cup water in a sauce pan for syrup with cardamom powder.
- After that, bring it to boil in oven.
- Untill cook it becomes sticky.
- Dip the fried khaja into the syrup when the syrup is still warm.
- After 2 min,take the well coat khajas in a plate.
A khaja is a deep-fried sugar coated tempting dessert from Bihar. Khaja is a most popular bihari sweet during wedding celebrations. There is a tradition to give Khaja with other sweets to the daughter when she goes to their in-law's house just after marriage (Bidai). Khaja is not a sweet we make at home or I have ever tasted before. I have tasted a similar one called chiroti.
