The ingredients needed to make Kheer Sagar (without refined sugar):
- Prepare 500 ml milk
- Get 1/2 cup chhena (cottage cheese)
- Get As required water
- Get As per taste misri powder
- Take 1/4 teaspoon cardamom powder
- Get Few saffron and pista to garnish (otional)
Take sama rice and coconut milk in a steel wok and heat them up till the milk begins to boil. Reduce to low flame and simmer the mixture till sama rice is completely cooked. Makhana Kheer is a very healthy dessert but sugar is the culprit and makes it unhealthy. Therefore, this time instead of refined sugar, I added Rock sugar which we call ' Kunja Misri' or 'Dhaga Mishri' in our native language.
Steps to make Kheer Sagar (without refined sugar):
- Knead the chhena first and make small balls out of it. In a pot add water and misri powder in 4: 1 ratio. dissolve the misri in water and let it come to a boil then add chhena balls into this and boil in medium high flame for 15 mins.
- Then take it out.
- Meanwhile heat milk until reduces on third of it's quantity then turn off flame add misri according to taste and add the chhena balls too.
- Garnish with saffron and pistachio.
- Note: let it rest for at least 3-4 hours before servig.
Makhana Kheer is a very healthy dessert but sugar is the culprit and makes it unhealthy.
