Place the beer can directly inside the cavity of the chicken. Place your chicken into the oven and roast for one hour and fifteen minutes. Season the chicken inside and out with salt and pepper. Steps to make Roasted Beer Chicken:
- Preheat oven to 220c.
- Using a large casserole dish with a lid add all the ingredients expect for the coriander as that's only for sprinkling at the end.
- Transfer dish to oven and cook for 60-70 minutes. Stick a fork in a potato to see if its soft, if so it's cooked and you can remove it from oven. To be honest I never really did keep track of the time but normally takes about an hour for chicken to cook.
- To serve sprinkle with the chopped coriander or dried parsley.
Season the chicken inside and out with salt and pepper. Squeeze the juice from the lime over the whole chicken, then place the halves into the cavity of the chicken. Set the half full beer can in the center of a roasting pan or baking dish, and place the chicken over it in an upright position with the beer inserted into the cavity. Season chicken generously with salt and pepper, and lay in baking dish. In a small bowl, combine the beer, and remaining ingredients.
