The ingredients needed to make Palak makhana:
  1. Prepare 2 bunch spinach
  2. Make ready 1 bunch fenugreek leaves
  3. Prepare 1.5 cup makhana
  4. Make ready 1 tbsp butter
  5. Take 1 ”ginger
  6. Take 10-12 garlic cloves whole
  7. Get 1 green chilli slit
  8. Get 2 onions thinly sliced
  9. Take 2 tbsp ghee
  10. Take 1 tsp cumin seeds
  11. Take Salt as per taste
  12. Take 1/2 tsp turmeric
  13. Get 1/2 tsp red chilli powder
  14. Take 1 tsp coriander powder
  15. Get 1 tbsp cream

Adjust taste with salt and chilli powder. Add makhana, mix and continue cooking. Adjust consistency with little hot water. Method Boil spinach with small amount of water till soft.

Steps to make Palak makhana:
  1. Clean, wash and blanch the spinach and fenugreek leaves.
  2. In a pan take butter and roast the makhanas on a low flame for around 8-10 minutes till they turn crispy.
  3. In a pan take ghee, add cumin seeds, garlic cloves, ginger, green chilli and let it sauté till the garlic turns golden colour.
  4. Add the onions and cook till they turn translucent.
  5. Add the blanched spinach and fenugreek leaves and season with turmeric, coriander powder and red chilli powder and cook for a minute. Switch off the flame and let it cool. Grind this into a fine paste.
  6. Add the paste back into the pan, add salt and cook for a minute. Adjust the consistency of the gravy by adding water if required. Add roasted makhanas and cook for a minute and add some cream and switch off the flame.
  7. Garnish with some more roasted makhanas and onion rings and serve with any Indian flat bread.

Heat oil and butter in a pan then add cumin seeds, onion sauté well till onion turns light brown then add ginger and garlic and green chilli sauté well.
